“Ah Tequila, it feels fine.” High quality tequila is a spirit to be enjoyed and pondered over in the same way a fine Bourbon, Scotch or Cognac would be. The key to good tequila is the blue agave that is used to make it.
Everything in tequila relies on this unusual plant, sharp green spikes shoot out of the red desert ground, to the untrained eye they look like any other desert cactus plant, however the blue agave is not a cactus, nor despite appearances is it related to the Aloe plant, it is actually a lily, it matures slowly in the desert sun taking on the rich earthy characteristics that are found in tequila. When harvested the leaves are stripped away leaving the heart; or as the workers know it the pin due to its resemblance to a pineapple.
Tequila, like Champagne, can only be produced in the official Tequila regions and can only be produced from blue agave, contrary to popular belief tequila does not come with a worm in the bottom of the bottle, that novelty belongs to tequilas cousin mezcal.
