Don Fulano comes from the Fonseca family, a family with more than five generations of experience in agave farming and tequila production. The brand places particular emphasis on treating tequila as an agricultural product, selecting mature agave from the family's own orchards and carefully controlling the process from cultivation through to bottling.
The Añejo begins with mature Blue Weber Agave from the highlands of Jalisco. The piñas are cooked at low pressure before fermentation and distillation, allowing the natural character of the agave to remain central to the finished spirit. Don Fulano's approach uses a combination of distillation techniques, followed by lengthy maturation in European oak.
For the Añejo, the spirit spends at least 30 months in French Limousin and Nevers oak casks. Don Fulano also uses casks that have previously held wines from regions including Burgundy and the Loire, giving the tequila additional layers of fruit, spice and complexity. After maturation, selected tequilas are blended to create the desired character before bottling.
A warm amber-gold colour introduces an expressive and aromatic character, with cooked agave accompanied by dried peaches, sweet vanilla, jasmine, honey and roasted nuts. As the tequila develops in the glass, richer notes of caramel, maple, banana, cardamom and lightly toasted coconut emerge, alongside gentle oak spice. The palate is full and velvety, balancing the natural sweetness of cooked agave with dried fruit, caramelised nuts and warming spices such as cardamom and clove. Dark chocolate and tobacco add further depth towards the finish, while a subtle peppery agave character and refreshing touch of menthol keep the long finish lively and elegant.
