Don Fulano is produced by the Fonseca family, whose history in agave farming and tequila production stretches across five generations. The family has longstanding connections to the highlands of Jalisco, where mature agave is cultivated and carefully selected for production. Don Fulano's approach places particular emphasis on allowing the character of the agave and the land to remain evident in the finished tequila.
The Reposado is created from 100% agave tequila and undergoes maturation in oak, giving the spirit additional richness and texture while retaining its underlying agave character. This balance between wood and agave is an important feature of the expression, with the oak contributing vanilla, butterscotch and gentle spice rather than overwhelming the fresh, peppery qualities of the tequila.
Don Fulano uses a distinctive double-column distillation process, contributing to the clean and expressive character of its tequilas. The Reposado is bottled at 40% ABV and contains no added sugar or flavourings according to current UK product information.
Warm cooked agave forms the foundation, accompanied by vanilla sponge, creamy butterscotch and delicate sweet spices. The palate is soft and generously textured, with vanilla sweetness and a buttery richness balanced by the distinctive peppery and mineral character of the agave. Subtle grassy and fresh vegetal notes emerge towards the finish, bringing freshness and preventing the oak influence from becoming too heavy. The result is a harmonious Reposado with a lingering combination of sweet vanilla, warm spice, mineral notes and clean agave character.
