Don Fulano is produced by the Fonseca family, whose tequila-making heritage spans five generations. The brand brings together the Fonsecas' experience in agave cultivation with traditional tequila production at La Tequileña in Jalisco. Don Fulano places particular emphasis on mature, carefully selected agave and the influence of the land in which it is grown.
The Blanco is designed as a direct expression of highland agave. The plants are allowed to mature for around 10 years before being harvested, helping develop the concentrated flavours that become apparent in the finished spirit. The rich red soil of the highlands is an important part of Don Fulano's approach to terroir and is reflected in the character of the tequila.
Following fermentation and distillation, the new spirit is rested in stainless steel rather than matured in oak. This allows the cooked-agave character, herbal freshness and natural peppery spice to remain prominent without the influence of barrel ageing. Don Fulano's production philosophy centres on three core ingredients: hand-selected mature agave, proprietary yeast and natural spring volcanic water.
Freshly cooked agave provides an inviting sweetness alongside fragrant herbal aromas, black pepper, butterscotch and a subtle savoury olive character. On the palate, peppery agave takes centre stage, balanced by refreshing notes of spearmint, rosemary and aniseed, with a bright citrus lift adding freshness. There is a gentle fruitiness running throughout, complemented by a soft, slightly oily texture that gives the tequila more depth than its unaged style might suggest. The finish is surprisingly persistent, leaving lingering cooked-agave sweetness, green herbs and a delicate peppery warmth.
