Ayala Champagne was founded by Edmond de Ayala in 1860 in the village of Aÿ. Edmond followed his pursuit of excellence and innovation launching a dry champagne using only a fraction of the usual amount of sugar during its bottling and seconded fermentation. Whilst Ayala is a lesser known Champagne brand, it was immensely popular in England during the early 1900’s producing over a million bottles a year and being awarded a royal warrant by King Edward VII.
Ayala was acquired by the Bollinger family in 2005 with an ambition to restore the brand to its former greatness. This started with the building of a new winery and the appointment of a new team focused on reviving Edmond de Ayala approach of excellence and innovation.
