Don Fulano is produced by the Fonseca family, whose history in agave cultivation and tequila production spans five generations. The family is based in the highlands of Jalisco, where the region's mature agave and distinctive terroir form an important part of the character of the tequila.
Imperial represents the most mature expression in the Don Fulano collection. The tequila is aged for a minimum of five years, allowing extended contact with oak to build considerable depth and complexity. European oak contributes rich dried-fruit, spice and wood characteristics, while the finishing period in Oloroso sherry casks brings additional layers of raisin, dark fruit, cocoa and nutty richness.
Rather than simply relying on lengthy maturation, Don Fulano's approach aims to maintain a balance between the influence of the casks and the natural character of the agave. This gives Imperial its distinctive combination of mature oak, dark fruit and dessert-like richness alongside peppery agave and warming spice. The result is a tequila intended to be savoured slowly rather than used simply as a cocktail ingredient.
Deep and richly aromatic, Imperial opens with cooked agave alongside dark berries, raisins, dried fig and roasted coffee beans, followed by hints of old leather, tobacco and warming oak. The palate is opulent and full-bodied, bringing together dark chocolate, sticky cherry, vanilla and sweet roasted nuts with cinnamon, clove, nutmeg and pepper. The influence of Oloroso sherry adds further dried-fruit richness and depth, while the mature oak provides structure without completely masking the underlying agave. Its finish is exceptionally long and velvety, leaving lingering sweet agave, dark cocoa, stewed fruit and warming spice.
