Corralejo distillery was Founded in 1775, in the town of Pénjamo and was one of the first Mexican estates to produce tequila commercially. Over the last 250 years their production methods have been refined whilst preserving the traditional skill to create the popular tequila. The distillery is among the chosen few who have been granted the right to produce tequila in a province other than Jalisco.
Corralejo tequila is a single estate product and solely made with 100% Blue Weber agave, which are hand- harvested from the fields in the state of Guanajuato. The agave pinas are slow roasted in clay ovens for 36 hours before being pressed and the liquids are then double distilled, the first distillation is a column still and the second distillation takes place in an Alembic copper pot still, imported from Tomelloso, Spain. This second distillation results in tequila that is refined and wonderfully aromatic. The Reposado and Anejo products are aged in oak barrels. Corralejo produces blanco tequila, reposado tequila and anejo tequila. Their range of products are Corralejo Blanco, Corralejo Reposado and Corralejo Anejo.
